Monday muffins
Ok, I actually made these on Sunday, and then again on Tuesday. Take the average and you have Monday.
Baking is a mystery to me. There so many pans, and so many ingredients... it's uncharted territory. Of course, I used to know a chef, who, upon hearing this, scoffed, and said, "Baking is easy. Very little 'feeling' involved in baking, and definitely no 'art.'" Unfortunate me, can't even handle the easy stuff.
What he said... Perhaps for some that's true.
But these were baked with much feeling; a feeling possibly close to hubris. While I realize that muffins are quite possibly the easiest thing to mix up and throw in the oven (evidenced by the fact that even I did it successfully), I still felt like I was soaring up to the sun when the warm scent filled my kitchen.
It was also a birthday brunch, and I was told NOT to make eggs, in light of the fact that over the last 2 weeks, we ate 2 quiches and 1 Spanish tortilla. I wanted something different, unexpected, at least out of me, and impressive (no one in my family bakes either). I also didn't want to stress and break out in hives, as I often do.
The point is, if I can make them, anyone can make them.
Miracle muffins
(makes about 8 big ones)
2 cups flour (all purpose is fine)
1 TBSP baking powder
2/3 cup sugar or brown sugar
pinch of salt
a little grated nutmeg
a sprinkle of ground cinnamon
2 large eggs
1 stick melted butter
1 cup milk
1 tsp vanilla
1 or 2 mashed ripe banana
handful of walnuts
Preheat oven to 400.
1) mix together the dry ingredients in a bowl, sift them to ensure good mixing
2) whisk the wet stuff together; the bananas - one will give just a hint of flavor, 2 will make a bona fide banana muffin. Throw the walnuts in the wet stuff too.
3) pour the wet into the dry
4) give a few strokes with a fork, mixture should be lumpy.
5) fill muffin pan... or muffin cups, like I had. I don't own pans. I don't bake. It was a miracle that I had flour and vanilla.
6) bake 25-30 mins.
YAY!!!
We served them with additional butter, and this delicious amaretto peach jelly we have.
The second time I made them.... I forgot salt. And they say there is no art involved!! Art is not forgetting the ingredients. Stupid, stupid, stupid...
